DIRECTIONS: • 1 Cup Cajohns Raspberry Chipotle Salsa • 6 Tbs Red wine vinegar • 2 Tbs Basalmic vinegar • 3 Tbs Olive Oil • 1 Sm Red onion • 2 Sm Can Mandarin oranges • 2 Oz Slivered almonds • -- Bunch Mixed salad greens Blend salsa until smooth. Combine salsa, vinegars, olive oil, and juice from mandarin oranges in a jar. Secure lid tightly and shake until blended. Chill in refrigerator until ready to serve. Thinly slice red onion. Place salad greens on plates, top with red onion slices, mandarin orange slices and slivered almonds. Drizzle raspberry vinaigrette over greens. Serves 6.
